Breadfast Cooks: Grilled Chicken Salad Recipe

Got bored with the good old garden salad? This chicken salad recipe is packed with flavors and is super easy to make. It’s perfect for a healthy lunch on-the-go, or dinner for those who want to shed some of that winter weight and get back on track. Ingredients:
–  Boneless chicken breasts
– Butter (for cooking the chicken) 

For the chicken marinade you’ll need:
– 1 cup yogurt– 3 tbsp mustard
– 4 tbsp soy sauce
– 2 tbsp onion powder
– Lemon juice ( ½ lemon)

For the dressing you’ll need:
– 2 tbsp mustard
– 2 tbsp balsamic vinegar
– 2 tbsp sunflower oil
– 1 tbsp soy sauce
– 2 garlic cloves, minced
– 1 tbsp honey

For the salad:
– Batavia lettuce
– Cherry tomatoes
– Red onions

Directions:

  • In a bowl, put the chicken breasts then add the chicken marinade made of yogurt, mustard, soy sauce, onion powder, and lemon juice. Mix everything together till the chicken is fully covered with the marinade.
  • Put the chicken in the fridge for an hour to absorb the marinade flavors and enhance the taste.
  • Place a grilling pan on the stove on medium-high heat then add 2 small butter cubes.
  • Add the chicken pieces and grill them on each side. Keep flipping until each side has a golden brown color.
  • As soon as the chicken is cooked thoroughly, turn off the heat.
  • In another bowl, start preparing the salad dressing by mixing mustard, balsamic vinegar, sunflower oil, soy sauce, minced garlic, honey, and lemon juice.
  • To make the salad base, put some Batavia lettuce, cherry tomatoes, and red onions together, then add the dressing. Cut the chicken in small slices then add it on top and mix well before transferring the salad to the serving bowl.
