Chocolate Cake from Heaven

Chocolate and chocolate cake fanatics, this one’s for you. I’m going to be honest – this has got to be one of my proudest culinary accomplishments of all time! After so much trial and error trying out different recipes, I’ve finally found the perfect ingredient combination to make a pure chocolate lover reach nirvana. (Please excuse the dark lighting images, I made it one evening for my anniversary!)Even my friends were gushing for days about this cake after I’ve served it to them! It’s gotten to the point where I don’t even glance at chocolate cakes in bakeries or groceries anymore, because why buy the cake when I can make one that tastes even better myself? 

When making the cake, you can divide the batter into 3 circular pans of equal size, or 2 like I did (see image above,) or you can simply make one large, single layer cake. Either way, if you follow the recipe I can guarantee amazing chocolatey deliciousness!

Cake
1 ½ cup all purpose flour
1 ½ cup white sugar
¾  cup cocoa powder
½ tablespoons baking soda
1  teaspoon baking powder
½ teaspoon salt
2 large eggs
¾ cup buttermilk
¼ cup coconut oil
¾ cup warm water
1 teaspoon vanilla extract

Frosting
1 cup softened butter
115 grams softened cream cheese
1 ½ cups powdered sugar*
1 ½ teaspoon vanilla extract
½ cup milk or more as needed

*it has to be powdered sugar, any other type of sugar won’t work!

Instruction

  1. Preheat oven to 175° C
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. Then, add in the wet ingredients: eggs, buttermilk, coconut oil, water, and vanilla extract. Make sure that all the ingredients are thoroughly mixed and that the texture is smooth and even.
  4. Pour the cake batter evenly into 3, or 2 baking pans of the same size, or 1 large baking pan.
    *Pro tip: for easy removal of the cake, coat the edges of your baking pan evenly with a light coat of butter, then dust with flour. Alternatively, you can line your pan with foil.
  5. Place your tray(s) in the center rack of the oven and bake for 30-35 minutes.
  6. Meanwhile for the frosting, whisk together the butter and cream cheese until it’s texture is whipped and fluffy.
  7. Add the vanilla extract and cocoa powder.
  8. Then, slowly add in the powdered sugar, and then the milk, mixing constantly until you get the desired thickness.
  9. When your cake is finished baking, take it out of the oven and let it cool completely before frosting. Enjoy your culinary masterpiece, and all the compliments that are about to come your way!
